Entrepreneur and restaurateur Geoff Tracy spoke about his career journey and how he tackles complexity, uncertainty and ambiguity at the Geno Auriemma UConn Leadership Conference in Stamford earlier this month. He also shared his popular recipe for honey sriracha cauliflower with the audience and prepared a sample for them to taste. After the conference, we received many requests from attendees who wanted a copy of Chef Geoff’s recipe, so we’re sharing it here.
A native of West Hartford, Tracy owns several restaurants in Greater Washington D.C. He and his wife, CBS anchor Norah O’Donnell, have three children.
Honey Sriracha Cauliflower
Prepare the Sweet and Sour Cauliflower and Honey Sriracha sauce according to the recipes below.
Toss the cauliflower pieces in some rice flour to coat, and fry them in oil until they’re crispy.
Toss the cauliflower in the Honey Sriracha sauce.
Garnish with chopped cilantro, sesame seeds, and sliced jalapenos or green onions.
Sweet and Sour Cauliflower
Ingredients:
1 head of cauliflower
1 tablespoon canola oil
1 tablespoon garlic, chopped
1 teaspoon Italian parsley, chopped
1 teaspoon kosher salt
1 teaspoon paprika
¼ cup apple cider vinegar
2 tablespoons brown sugar
Directions:
Preheat oven to 400F.
Clean and cut the cauliflower into bite size pieces.
Toss with the oil, garlic, parsley, salt, paprika, vinegar, and brown sugar.
Spread out on a baking sheet, roast until just tender (20-25min)
Chill cauliflower until you are ready for final preparation.
Honey Sriracha Sauce
Ingredients:
½ cup Korean red chili paste (gouchujang paste)
¼ cup sriracha
½ cup orange marmalade
.25 oz fresh orange juice
¼ cup honey
1 teaspoon kosher salt
1 teaspoon sesame oil
Directions:
In a small bowl, add all ingredients and whisk together.
